Poodles come in a variety of colors & patterns.

If you look at paintings of poodles from the 1500's most are depicted as 2 color (or parti colored). The Poodle Club of America prefers the solid colors, and when they created the breed standards, they only list solid colors - thus in AKC, only solids can be shown in confirmation.
Parti's can be registered AKC (American Kennel Club), and can compete in other events. In UKC (United Kennel Club) the parti's can be shown in confirmation, and our own retired, Stedman is a UKC Champion in confirmation.
Merle is NOT a naturally occurring color in Poodles, for poodle to be merle in color - there is some other breed that brought that color gene into the line - and there is a probability of a MDR-1 mutatation that can be dangerous. For that reason, we WILL not breed merle's or any dog known to have merle in their line.
